So, I was starving today when trying to figure out my lunch today. I wanted quick, filling and to be able to use up the last of some leftover rice in the fridge. (There wasn’t enough to justify throwing it in the freezer.) I wanted something hale and hearty, but fast.
So, I came up with this:
1 can cannellini beans, rinsed and drained
1 small onion, chopped
1/4 t. onion powder or 1 minced clove of fresh garlic
1/4 – 1/2 t. vegetable bouillion base (you know, the paste stuff)
1/2 c. water
2 t. olive oil
Salt & pepper
1 pat of butter
Heat a medium skillet over medium-high heat, add your oil, and let it get hot. Add your onion and sautee for just a few minutes, until they are softening, then all all the other ingredients, except butter, and stir and cook until onions are almost tender, then reduce heat, throw in the pat of butter and stir it in. Presto. 5 minutes. There will still be some liquid/sauce in your pan/. Serve over leftover rice of your choice. Makes 2 servings.
